Spice School



What is it?

A joint venture between Sanjana (yes, she of Ko Rasoi fame) and yours truly, Spice School is deliciousness in the format of distance learning for the greedy gourmet: a year-long course of three terms designed to cover the basics of Indo-vegetarian cooking. And then some. Each term is progressively more complex (though not necessarily more difficult) than the last, and at the end, students will have learned how to prepare dishes that previously seemed unapproachable or tricky. The aim is to expand our culinary horizons together – new ways of thinking and all that. It’s going to be just like Dead Poets Society, only there’ll be no suicide, no standing on tables and no sacking the teacher. Oh, and no Robin Williams either. Sorry.

How did it get started?

Believe it or not, we've been sitting on the idea for almost a year. That’s right: we are the original slackers. The long and the short of it is that Sanjana and I live miles apart; it would be impractical (in fact, borderline impossible) to pop round to each other's houses for a lesson in samosa making, however nice an idea that is. Thus, everybody’s best friend (the internet) is stepping in to save the day. Blogging is the perfect medium for Spice School: it means you good people can all come along for the journey, but don’t have to put up with the smell of burnt mustard seeds if we leave the heat too high. Which obviously, we would never do. Well, I might. But Sanjana wouldn't.


How is this going to work?

It’s simple. We cook, and we eat. Sanjana has put together a full curryculum (Ha! How's that for a pun?) of 12 dishes – that’s one per month – based around different spices. These are arranged into three different levels of complexity: Tiffinwalla, for the quick and easy, Chaiwalla, for the slightly more advanced, and Guru, for the real showstoppers. Which will I become? Who knows. 


Each month, Sanjana has agreed to post the relevant recipe on KO Rasoi and I will cook and post the same dish right here on Delicious Delicious Delicious. It might sound daunting, but it really isn’t. All of the spices and ingredients are going to be readily available in supermarkets, and easy to get hold of. 


Can I join in as well?

Nothing would make us happier! Good food is for everyone. Please enrol at Spice School yourself (you can even grab the badge!) If you cook a dish we post (no need to participate every month, but there’s nothing to stop you doing so if you’d like), send us an email with a photo or leave a comment linking to your post if you have a blog as well. Let us know how it worked out for you; we'll mention your efforts in our posts so other people can see your progress.
